Lemon Chocolate Drizzle Cake Recipe

Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup butter, softened
  • 1 ½ cups sugar
  • 4 eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup freshly squeezed lemon juice
  • 1 cup semi-sweet chocolate chips
  • ¼ cup heavy cream

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour 2 (9-inch) round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.
  4. Add half of the flour mixture to the butter mixture and beat until just combined. Beat in lemon juice, then add remaining flour mixture and beat until just combined.
  5. Divide batter evenly between prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  6. In a small saucepan over low heat, melt together chocolate chips and heavy cream. Stir until smooth.
  7. Drizzle the melted chocolate over the cooled cake layers, then slice and serve.
