Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup milk
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flakes
  • 1/2 cup confectioners’ sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons lemon juice

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
  2. In a medium bowl, stir together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the 1/2 cup of butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk, 2 tablespoons of lemon juice, and vanilla.
  4. Gradually blend in the dry ingredients.
  5. Fold in the coconut flakes.
  6. Pour the batter into the prepared pan.
  7. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. In a small bowl, mix together the confectioners’ sugar, 2 tablespoons melted butter, and 2 tablespoons lemon juice. Drizzle over the cake while still warm.
