Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 3/4 cup milk
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup coconut flakes
- 1/2 cup confectioners’ sugar
- 2 tablespoons butter, melted
- 2 tablespoons lemon juice
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
- In a medium bowl, stir together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the 1/2 cup of butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk, 2 tablespoons of lemon juice, and vanilla.
- Gradually blend in the dry ingredients.
- Fold in the coconut flakes.
- Pour the batter into the prepared pan.
- Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- In a small bowl, mix together the confectioners’ sugar, 2 tablespoons melted butter, and 2 tablespoons lemon juice. Drizzle over the cake while still warm.
