Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 4 eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/4 cups whole milk
  • 1/2 cup ricotta cheese
  • 2 tablespoons butter, melted
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup confectioners’ sugar

Directions:

  1. Preheat oven to 350°F. Grease an 8-inch round cake pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat until fully incorporated.
  4. Add the lemon juice, lemon zest, and vanilla extract and mix until combined. Gradually add the flour mixture and mix until just incorporated.
