Ingredients:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 eggs
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 1/4 cups whole milk
- 1/2 cup ricotta cheese
- 2 tablespoons butter, melted
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup confectioners’ sugar
Directions:
- Preheat oven to 350°F. Grease an 8-inch round cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat until fully incorporated.
- Add the lemon juice, lemon zest, and vanilla extract and mix until combined. Gradually add the flour mixture and mix until just incorporated.
