Lemon Thyme Drizzle Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp lemon zest
  • 1 tbsp fresh thyme leaves, finely chopped
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice

For the Thyme Syrup:

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp fresh thyme leaves

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then add the lemon zest and thyme leaves.
  5. Gradually stir in the dry ingredients, alternating with the milk and lemon juice, until well combined.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. While the cake is baking, make the thyme syrup. In a small saucepan, combine the sugar, water, and thyme leaves. Bring to a boil and simmer for 5 minutes, stirring occasionally.
  9. Once the cake is done, remove it from the oven and allow it to cool in the pan for 5 minutes.
  10. While the cake is still warm, poke holes all over the surface with a toothpick or skewer.
  11. Slowly pour the thyme syrup over the cake, allowing it to soak in.
  12. Let the cake cool completely before slicing and serving.
