Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tbsp lemon zest
- 1 tbsp fresh thyme leaves, finely chopped
- 1/2 cup milk
- 1/4 cup fresh lemon juice
For the Thyme Syrup:
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tbsp fresh thyme leaves
Instructions:
- Preheat the oven to 350°F. Grease a 9-inch cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the lemon zest and thyme leaves.
- Gradually stir in the dry ingredients, alternating with the milk and lemon juice, until well combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
