Lemon Zest Blueberry Banana Bread Recipe

This delicious Lemon Zest Blueberry Banana Bread is an easy-to-make, moist and flavorful quick bread. The combination of sweet blueberries and zesty lemons makes a perfect treat for breakfast, brunch, or dessert.

Ingredients:

  • 3 Ripe Bananas (mashed)
  • 1/4 Cup Unsalted Butter (melted)
  • 1/2 Cup Granulated Sugar
  • 2 Eggs
  • 1/2 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 1/2 Cups All-Purpose Flour
  • 1/2 teaspoon Lemon Zest
  • 1/2 Cup Fresh Blueberries

Directions:

  1. Preheat oven to 350 degrees Fahrenheit and grease a 9×5 inch loaf pan.
  2. In a large bowl, mash the bananas with a fork.
  3. Add the melted butter, sugar and eggs and mix until combined.
  4. Add the vanilla extract, baking soda, baking powder, salt, flour and lemon zest and mix until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the greased loaf pan and spread evenly.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely before slicing and serving.
