This delicious Lemon Zest Blueberry Banana Bread is an easy-to-make, moist and flavorful quick bread. The combination of sweet blueberries and zesty lemons makes a perfect treat for breakfast, brunch, or dessert.
Ingredients:
- 3 Ripe Bananas (mashed)
- 1/4 Cup Unsalted Butter (melted)
- 1/2 Cup Granulated Sugar
- 2 Eggs
- 1/2 teaspoon Vanilla Extract
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 1 1/2 Cups All-Purpose Flour
- 1/2 teaspoon Lemon Zest
- 1/2 Cup Fresh Blueberries
Directions:
- Preheat oven to 350 degrees Fahrenheit and grease a 9×5 inch loaf pan.
- In a large bowl, mash the bananas with a fork.
- Add the melted butter, sugar and eggs and mix until combined.
- Add the vanilla extract, baking soda, baking powder, salt, flour and lemon zest and mix until just combined.
- Gently fold in the blueberries.
