Ingredients:

  • 2 lbs. ground beef
  • 1 cup rolled oats
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 1/2 cup ketchup
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the ground beef, oats, onion, green bell pepper, garlic, eggs, ketchup, 1/4 cup maple syrup, Dijon mustard, Worcestershire sauce, thyme, pepper, and salt.
  3. Form the mixture into a loaf shape and place into the prepared baking dish.
  4. In a small bowl, mix together the remaining 1/4 cup maple syrup and Dijon mustard. Brush the mixture over the meatloaf.
  5. Bake in the preheated oven for 1 hour or until the internal temperature reaches 165 degrees F (75 degrees C).
  6. Allow to cool for 10 minutes before slicing and serving.
