Ingredients:
- 3 cups all-purpose flour

- 1/2 cup butter, melted
- 1/2 cup packed brown sugar
- 2 eggs
- 1 cup mashed cooked sweet potato

- 1/2 cup pure maple syrup
- 1/4 cup chopped pecans (optional)
Directions:
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan and set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a separate bowl, beat together the melted butter and brown sugar until creamy. Add eggs, sweet potato, and vanilla extract, and beat until combined.
