Mediterranean Meatloaf

Ingredients:

  • 2 lbs ground beef
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped sun-dried tomatoes
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 egg, beaten
  • 1/4 cup breadcrumbs
  • 1/4 cup milk

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, cooked quinoa, crumbled feta cheese, chopped sun-dried tomatoes, chopped Kalamata olives, chopped fresh parsley, minced garlic, dried oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. In a separate mixing bowl, whisk together the beaten egg, breadcrumbs, and milk until well combined.
  4. Add the egg mixture to the meat mixture and mix well.
  5. Line a baking sheet with parchment paper and shape the mixture into a loaf shape on top of the parchment paper.
  6. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  7. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.
