Mediterranean Niçoise Pasta Salad

Ingredients:

  • 1 lb. whole wheat pasta

  • 1/4 cup red wine vinegar

  • 1/2 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 1/4 tsp. sea salt
  • 1/2 cup kalamata olives, pitted and halved
  • 1 (5-oz.) can tuna, drained
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup roasted red peppers, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped

Directions:

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, about 8 minutes. Drain and rinse with cold water.
