Mediterranean Niçoise Pasta Salad

Ingredients:
- 1 lb. whole wheat pasta
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tbsp. Dijon mustard
- 1/2 tsp. dried oregano
- 1/4 tsp. black pepper
- 1/4 tsp. sea salt
- 1/2 cup kalamata olives, pitted and halved
- 1 (5-oz.) can tuna, drained
- 1/2 cup cherry tomatoes, halved
- 1/2 cup roasted red peppers, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
Directions:
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, about 8 minutes. Drain and rinse with cold water.
- In a large bowl, whisk together the olive oil, vinegar, garlic, mustard, oregano, black pepper, and sea salt. Add the cooked pasta, olives, tuna, tomatoes, red peppers, onion, and parsley. Toss to combine.
