This Mediterranean Odyssey 7-Layer Salad with Feta and Olives is a great way to enjoy the flavors of the Mediterranean. Ingredients:
- 1 head of romaine lettuce, chopped
- 1 cup of feta cheese, crumbled
- 1/2 cup of kalamata olives, sliced
- 1 cup of cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 cup of red onion, diced
- 1/4 cup of extra-virgin olive oil
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of garlic, minced
- 1 teaspoon of oregano, dried
- Salt and pepper, to taste
Directions:
- In a large bowl, combine the romaine lettuce, feta cheese, kalamata olives, cherry tomatoes, cucumber, and red onion until evenly distributed.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, garlic, oregano, and salt and pepper until the dressing is blended.
