Mediterranean-Style Pot Roast with Tomatoes and Olives

Ingredients:

  • 2 tablespoons olive oil
  • 3-4 pound beef roast
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup pitted kalamata olives, halved

Directions:

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  2. Sear the beef roast on all sides until browned.
  3. Add the diced onion and sauté until softened, about 3-5 minutes.
  4. Add the garlic, oregano, basil, thyme, salt, and pepper and cook for another minute.
  5. Add the beef broth and bring to a boil.
  6. Cover and reduce the heat to low. Simmer for 2-3 hours, or until the beef is tender.
  7. Add the diced tomatoes and olives and simmer for another 15-20 minutes.
