Mediterranean-Style Pot Roast with Tomatoes and Olives
This delicious Mediterranean-Style Pot Roast with Tomatoes and Olives is a hearty and healthy meal that will be sure to please the whole family. The combination of tomatoes, olives, and herbs gives it a unique flavor that is sure to make it a Sunday Supper favorite.
Ingredients:
- 2 tablespoons olive oil
- 3-4 pound beef roast
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup pitted kalamata olives, halved
Directions:
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Sear the beef roast on all sides until browned.
- Add the diced onion and sauté until softened, about 3-5 minutes.
- Add the garlic, oregano, basil, thyme, salt, and pepper and cook for another minute.
- Add the beef broth and bring to a boil.
- Cover and reduce the heat to low. Simmer for 2-3 hours, or until the beef is tender.
- Add the diced tomatoes and olives and simmer for another 15-20 minutes.
