Mini Key Lime Choux Puffs Recipe

Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 cup all-purpose flour
- 1 cup water
- 4 large eggs

- 1/4 cup freshly squeezed key lime juice
- 1 teaspoon key lime zest
- 1/2 cup heavy cream
- 1 teaspoon pure vanilla extract
- 1/4 cup powdered sugar
Directions:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- In a medium saucepan, melt the butter over medium-high heat. Once the butter is melted, add the flour and whisk until combined. Cook for about 1 minute, stirring constantly.
- Add the water to the pan and stir until the mixture is thick and comes together in a ball. Remove the pan from the heat and allow the mixture to cool for about 5 minutes.
- In a large bowl, beat the eggs until light and fluffy. Add the sugar, salt, key lime juice, and zest and mix until combined.
- Add the cooled butter mixture to the egg mixture and mix until combined.
- Using a spoon or a piping bag, drop tablespoon-sized mounds of the mixture onto the prepared baking sheet. Bake for 20-25 minutes, until golden brown.
- In a medium bowl, beat the heavy cream and vanilla until stiff peaks form. Add the powdered sugar and beat until combined.
