Ingredients:

  • 3 ripe bananas, mashed
  • 1 cup grated zucchini
  • 1/2 cup butter, melted
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/2 cup raisins (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, mash the ripe bananas.
  3. Grate the zucchini and add to the bowl with the mashed bananas.
  4. In a separate bowl, mix together the melted butter, brown sugar, and white sugar.
  5. Add the eggs and vanilla extract to the butter mixture, stirring to combine.
  6. Add the wet ingredients to the bowl with the mashed bananas and zucchini, stirring until fully combined.
  7. In a third bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, cardamom, and salt.
  8. Stir the dry ingredients into the wet ingredients until just combined. If using raisins, add them to the batter and mix to combine.
  9. Pour the batter into the greased loaf pan and bake for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
