Ingredients:
- 3 ripe bananas, mashed
- 1 cup grated zucchini
- 1/2 cup butter, melted
- 1/2 cup light brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1/2 cup raisins (optional)
Directions:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, mash the ripe bananas.
- Grate the zucchini and add to the bowl with the mashed bananas.
- In a separate bowl, mix together the melted butter, brown sugar, and white sugar.
- Add the eggs and vanilla extract to the butter mixture, stirring to combine.
- Add the wet ingredients to the bowl with the mashed bananas and zucchini, stirring until fully combined.
- In a third bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, cardamom, and salt.
- Stir the dry ingredients into the wet ingredients until just combined. If using raisins, add them to the batter and mix to combine.
- Pour the batter into the greased loaf pan and bake for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
