Moroccan Spiced Seven-Layer Salad with Harissa-Infused Couscous

This flavorful and healthy dish layers seven ingredients including couscous, tomatoes, cucumber, bell peppers, and onions, all spiced with Moroccan flavors and infused with a rich and spicy Harissa sauce. Ingredients:

  • 1/2 cup couscous
  • 1/3 cup Harissa sauce
  • 1/4 cup olive oil
  • 2 tomatoes, diced
  • 1/2 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/2 tsp. ground ginger
  • Salt and pepper to taste

Directions:

  1. In a medium saucepan, bring 1 cup of water to a boil. Turn off the heat, add the couscous, and stir. Cover the pan and let sit for 5 minutes. Fluff the couscous with a fork and set aside.
  2. In a small bowl, combine the Harissa sauce with the olive oil. Set aside.
  3. In a large bowl, combine the tomatoes, cucumber, bell pepper, and onion. Sprinkle with the cumin, coriander, ginger, salt and pepper and mix well.
  4. Layer the couscous in the bottom of a serving bowl. Top with the vegetables and then drizzle with the Harissa-infused olive oil.
  5. Chill the salad for at least 1 hour before serving.
  6. Once the salad has chilled, top with a sprinkle of chopped fresh parsley or cilantro.
  7. Serve the Moroccan Spiced Seven-Layer Salad with Harissa-Infused Couscous chilled or at room temperature.
