Moroccan Spiced Seven-Layer Salad with Harissa-Infused Couscous
This flavorful and healthy dish layers seven ingredients including couscous, tomatoes, cucumber, bell peppers, and onions, all spiced with Moroccan flavors and infused with a rich and spicy Harissa sauce. The flavors blend together to create a vegetarian-friendly and hearty meal that can be enjoyed by all.
Ingredients:
- 1/2 cup couscous
- 1/3 cup Harissa sauce
- 1/4 cup olive oil
- 2 tomatoes, diced
- 1/2 cucumber, diced
- 1 bell pepper, diced
- 1/2 onion, diced
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. ground ginger
- Salt and pepper to taste
Directions:
- In a medium saucepan, bring 1 cup of water to a boil. Turn off the heat, add the couscous, and stir. Cover the pan and let sit for 5 minutes. Fluff the couscous with a fork and set aside.
- In a small bowl, combine the Harissa sauce with the olive oil. Set aside.
- In a large bowl, combine the tomatoes, cucumber, bell pepper, and onion. Sprinkle with the cumin, coriander, ginger, salt and pepper and mix well.
- Layer the couscous in the bottom of a serving bowl. Top with the vegetables and then drizzle with the Harissa-infused olive oil.
- Chill the salad for at least 1 hour before serving.
- Once the salad has chilled, top with a sprinkle of chopped fresh parsley or cilantro.
- Serve the Moroccan Spiced Seven-Layer Salad with Harissa-Infused Couscous chilled or at room temperature.
