Mozzarella and Pesto-Stuffed Meatloaf
This delicious and easy-to-make dish is perfect for any weeknight dinner. Mozzarella and pesto are stuffed inside of a savory meatloaf for a unique and flavorful twist. Serve with a side of veggies or potatoes for a complete meal.
Ingredients:
- 1 lb. ground beef
- 1 cup Italian-style breadcrumbs
- 1/2 cup finely diced onion
- 1/2 tsp. garlic powder
- 1/4 cup ketchup
- 1 egg
- 1/2 cup pesto
- 1/2 cup mozzarella cheese, shredded
Directions:
- Preheat oven to 375 degrees F.
- In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic powder, ketchup, and egg.
- Form the mixture into a loaf-shaped mound in the center of a greased 9×13 inch baking dish.
- Spread the pesto over the top of the meatloaf.
- Sprinkle the mozzarella cheese over the pesto.
- Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and the meatloaf is cooked through.
- Allow to cool for 10 minutes before slicing and serving.
