Mozzarella and Pesto-Stuffed Meatloaf

This delicious and easy-to-make dish is perfect for any weeknight dinner. Mozzarella and pesto are stuffed inside of a savory meatloaf for a unique and flavorful twist. Serve with a side of veggies or potatoes for a complete meal.

Ingredients:

  • 1 lb. ground beef
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup finely diced onion
  • 1/2 tsp. garlic powder
  • 1/4 cup ketchup
  • 1 egg
  • 1/2 cup pesto
  • 1/2 cup mozzarella cheese, shredded

Directions:

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic powder, ketchup, and egg.
  3. Form the mixture into a loaf-shaped mound in the center of a greased 9×13 inch baking dish.
  4. Spread the pesto over the top of the meatloaf.
  5. Sprinkle the mozzarella cheese over the pesto.
  6. Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and the meatloaf is cooked through.
  8. Allow to cool for 10 minutes before slicing and serving.
