Mushroom and Goat Cheese Quiche

Ingredients:
- 1 9-inch unbaked pie crust
- 2 tablespoons unsalted butter
- 1 small onion, diced
- 1 cup mushrooms, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 large eggs
- 1 cup heavy cream
- 1/2 teaspoon chopped fresh thyme
- 1/2 teaspoon chopped fresh rosemary
- 3/4 cup crumbled goat cheese
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Place pie crust in a 9-inch pie plate and set aside.
- In a large skillet, melt butter over medium-high heat. Add onion and mushrooms, and sauté for 4-5 minutes, or until vegetables are softened. Season with salt and pepper.
