Mushroom and Goat Cheese Quiche

This delicious quiche is the perfect combination of earthy mushrooms, creamy goat cheese, and a buttery crust. It’s a simple dish that can be served for breakfast, lunch, or dinner. The combination of flavors and textures make this quiche a beloved classic.

Ingredients:

  • 1 9-inch unbaked pie crust
  • 2 tablespoons unsalted butter
  • 1 small onion, diced
  • 1 cup mushrooms, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon chopped fresh thyme
  • 1/2 teaspoon chopped fresh rosemary
  • 3/4 cup crumbled goat cheese

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place pie crust in a 9-inch pie plate and set aside.
  3. In a large skillet, melt butter over medium-high heat. Add onion and mushrooms, and sauté for 4-5 minutes, or until vegetables are softened. Season with salt and pepper.
  4. In a medium bowl, whisk together eggs, cream, thyme, and rosemary. Stir in the sautéed vegetables and goat cheese.
  5. Pour the mixture into the prepared pie crust and spread evenly.
  6. Bake for 35 minutes, or until the center is set and the top is golden brown.
