Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 cups romaine, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup kalamata olives, pitted and sliced
- 2 hard boiled eggs, diced
- 1/2 can tuna, drained
- 1/4 cup crumbled feta cheese
- 1/4 cup lemon juice
- 1/4 cup chopped parsley
Directions:
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a small bowl, combine chickpeas, olive oil, garlic, salt, and pepper. Toss to combine.
- Spread chickpeas on baking sheet in an even layer. Roast for 20 minutes, stirring once halfway through.
- In a large bowl, combine romaine, tomatoes, cucumber, red onion, olives, eggs, tuna, feta cheese, and lemon juice. Toss to combine.
- Add roasted chickpeas to salad and toss to combine.
- Divide salad among 4 serving plates and top with crumbled feta cheese and chopped parsley.
