Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 2 cups romaine, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 hard boiled eggs, diced
  • 1/2 can tuna, drained
  • 1/4 cup crumbled feta cheese
  • 1/4 cup lemon juice
  • 1/4 cup chopped parsley

Directions:

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine chickpeas, olive oil, garlic, salt, and pepper. Toss to combine.
  3. Spread chickpeas on baking sheet in an even layer. Roast for 20 minutes, stirring once halfway through.
  4. In a large bowl, combine romaine, tomatoes, cucumber, red onion, olives, eggs, tuna, feta cheese, and lemon juice. Toss to combine.
  5. Add roasted chickpeas to salad and toss to combine.
  6. Divide salad among 4 serving plates and top with crumbled feta cheese and chopped parsley.
