Ingredients:

  • 1 pound ziti pasta
  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (such as zucchini, bell peppers, mushrooms, onion, etc.)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24-ounce) jar pasta sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions:

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Cook the ziti according to the package instructions. Drain and set aside.
  3. In a large bowl, combine the olive oil, vegetables, garlic powder, Italian seasoning, salt, and pepper. Toss to combine.
  4. Spread the vegetable mixture in the bottom of the prepared baking dish.
  5. Spread the cooked ziti over the vegetables.
