Oven-Roasted Ziti

Ingredients:
- 1 pound ziti pasta
- 1 tablespoon olive oil
- 2 cups chopped vegetables (such as zucchini, bell peppers, mushrooms, onion, etc.)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (24-ounce) jar pasta sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Directions:
- Preheat oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
- Cook the ziti according to the package instructions. Drain and set aside.
- In a large bowl, combine the olive oil, vegetables, garlic powder, Italian seasoning, salt, and pepper. Toss to combine.
- Spread the vegetable mixture in the bottom of the prepared baking dish.
- Spread the cooked ziti over the vegetables.
