Paprika-Spiced Beef Stroganoff with Green Peppers
This delicious one-pot meal is sure to please the whole family. It’s made with beef stroganoff and green peppers, cooked in a paprika-spiced sauce for an extra kick. Serve with a side of mashed potatoes or egg noodles for a complete meal.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup beef broth
- 1 (8 oz) can tomato sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 1/2 cup sour cream
Directions:
- In a large skillet over medium-high heat, cook beef and onion until beef is browned. Drain off excess fat.
- Add garlic, bell peppers, beef broth, tomato sauce, Worcestershire sauce, paprika, salt, and pepper to the skillet. Bring to a boil and reduce heat to low. Simmer for 15 minutes, stirring occasionally.
- In a small bowl, mix together the cornstarch and cold water until completely dissolved. Add to the skillet and stir until the sauce has thickened.
- Remove from heat and stir in the sour cream until completely mixed.
- Serve over mashed potatoes or egg noodles.
- Garnish with parsley and extra paprika, if desired.
