Paprika-Spiced Beef Stroganoff with Green Peppers

This delicious one-pot meal is sure to please the whole family. It’s made with beef stroganoff and green peppers, cooked in a paprika-spiced sauce for an extra kick. Serve with a side of mashed potatoes or egg noodles for a complete meal.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup beef broth
  • 1 (8 oz) can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1/2 cup sour cream

Directions:

  1. In a large skillet over medium-high heat, cook beef and onion until beef is browned. Drain off excess fat.
  2. Add garlic, bell peppers, beef broth, tomato sauce, Worcestershire sauce, paprika, salt, and pepper to the skillet. Bring to a boil and reduce heat to low. Simmer for 15 minutes, stirring occasionally.
  3. In a small bowl, mix together the cornstarch and cold water until completely dissolved. Add to the skillet and stir until the sauce has thickened.
  4. Remove from heat and stir in the sour cream until completely mixed.
  5. Serve over mashed potatoes or egg noodles.
  6. Garnish with parsley and extra paprika, if desired.
