Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 and 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

For the peanut butter frosting:

  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter, peanut butter, and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Beat in the vanilla extract.
  6. Gradually add the flour mixture, alternating with the milk, and mix until just combined.
  7. Spoon the batter into the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.

To make the peanut butter frosting:

  1. In a large bowl, beat the butter and peanut butter together until smooth.
  2. Gradually add the powdered sugar, heavy cream, and vanilla extract and mix until smooth and creamy.
  3. Pipe or spread the frosting onto the cooled cupcakes and serve.
