Penne with Artichoke and Spinach Cream Sauce
This creamy and comforting pasta dish is perfect for a weeknight dinner. Penne is tossed with artichoke and spinach in a rich and creamy sauce of butter, garlic, white wine, cream, and Parmesan cheese. Serve this pasta dish with a side salad for a complete meal.
Ingredients:
- 1 lb penne pasta
- 1/4 cup butter
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 2 cups spinach, chopped
- Salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil. Add the penne and cook until al dente, about 8 minutes.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
- Add the white wine and cook for another minute or two, until it has reduced a bit.
- Add the cream, Parmesan cheese, artichoke hearts, and spinach. Season with salt and pepper to taste.
- Simmer for 5 minutes, stirring occasionally.
- Drain the cooked penne and add it to the skillet with the sauce. Toss to combine.
- Serve the pasta with additional Parmesan cheese, if desired.
