Penne with Artichoke and Spinach Cream Sauce

This creamy and comforting pasta dish is perfect for a weeknight dinner. Penne is tossed with artichoke and spinach in a rich and creamy sauce of butter, garlic, white wine, cream, and Parmesan cheese. Serve this pasta dish with a side salad for a complete meal.

Ingredients:

  • 1 lb penne pasta
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add the penne and cook until al dente, about 8 minutes.
  2. Meanwhile, melt the butter in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
  3. Add the white wine and cook for another minute or two, until it has reduced a bit.
  4. Add the cream, Parmesan cheese, artichoke hearts, and spinach. Season with salt and pepper to taste.
  5. Simmer for 5 minutes, stirring occasionally.
  6. Drain the cooked penne and add it to the skillet with the sauce. Toss to combine.
  7. Serve the pasta with additional Parmesan cheese, if desired.
