Pesto Pasta
This easy and delicious pesto pasta is perfect for a weeknight dinner. Made with fresh pesto, tomatoes, garlic, and a hint of parmesan cheese, this dish is sure to satisfy your Italian cravings.
Ingredients:
- 1 lb. pasta noodles of your choice
- 1 cup homemade pesto sauce
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup freshly grated parmesan cheese
- Salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
- Meanwhile, prepare the pesto sauce according to recipe instructions.
- In a large skillet over medium-high heat, add the cherry tomatoes and garlic. Sauté for about 3 minutes, until tomatoes are softened and garlic is fragrant.
- Add the pesto sauce and stir to combine. Reduce heat to low and simmer for 5 minutes.
- Drain the cooked pasta and add it to the skillet. Gently toss the pasta with the pesto sauce until it is evenly coated. Add a splash of the cooking water if the sauce is too thick.
