Pickle and Caper-Topped Beef Stroganoff

This Pickle and Caper-Topped Beef Stroganoff is a delicious and comforting meal for the whole family. Ingredients:

  • 1 pound beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1/4 cup chopped pickles
  • 2 tablespoons capers, drained
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley, to garnish

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides, about 10 minutes. Transfer to a plate and set aside.
  2. Add the onion and garlic to the skillet and cook until softened, about 5 minutes. Add the mushrooms and cook until softened, about 5 minutes more.
  3. Stir in the tomato paste, Worcestershire sauce, and mustard. Cook for 1 minute more.
  4. Add the beef broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  5. Add the beef cubes back to the skillet and simmer for an additional 10 minutes, or until the beef is cooked through.
  6. Stir in the sour cream, pickles, and capers. Simmer for 3-5 minutes more.
  7. Season with salt and pepper, to taste. Serve warm, garnished with fresh parsley. Enjoy!
