Pickle and Caper-Topped Beef Stroganoff
This Pickle and Caper-Topped Beef Stroganoff is a delicious and comforting meal for the whole family. Ingredients:
- 1 pound beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup beef broth
- 1/2 cup sour cream
- 1/4 cup chopped pickles
- 2 tablespoons capers, drained
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley, to garnish
Directions:
- Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides, about 10 minutes. Transfer to a plate and set aside.
- Add the onion and garlic to the skillet and cook until softened, about 5 minutes. Add the mushrooms and cook until softened, about 5 minutes more.
- Stir in the tomato paste, Worcestershire sauce, and mustard. Cook for 1 minute more.
- Add the beef broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Add the beef cubes back to the skillet and simmer for an additional 10 minutes, or until the beef is cooked through.
- Stir in the sour cream, pickles, and capers. Simmer for 3-5 minutes more.
- Season with salt and pepper, to taste. Serve warm, garnished with fresh parsley. Enjoy!
