**For the Crispy Onions:**
– 1 large onion, thinly sliced
– 1 cup buttermilk
– 1 cup all-purpose flour
– 1 teaspoon paprika
– Oil for frying

### Instructions
**Pulled Pork Preparation:**
1. Preheat your oven to 325°F (163°C). Rub the pork shoulder all around with smoked paprika, garlic powder, onion powder, salt, and pepper. Place in a roasting pan.
2. Cover the pork shoulder with aluminum foil and roast for about 4 hours, or until the meat is tender enough to be easily shredded with a fork.
3. Remove the pork from the oven and let it rest until cool enough to handle. Shred the pork using two forks.
4. In a large skillet over medium heat, mix the shredded pork with barbecue sauce. Cook until the pork is heated through. Set aside.
**Mac and Cheese Preparation:**
5. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
6. In a large saucepan, melt butter over medium heat. Stir in flour and keep stirring for about 1 minute. Gradually whisk in milk until the mixture is smooth. Continue cooking, whisking constantly, until the mixture thickens.
7. Remove the saucepan from heat. Stir in the sharp cheddar and mozzarella cheeses until melted and smooth. Season with salt and pepper.
8. Add the cooked macaroni to the cheese sauce and stir until well combined. Fold in the prepared pulled pork, mixing thoroughly. Transfer to a baking dish.
**Crispy Onions:**
9. In a bowl, soak the thinly sliced onions in buttermilk for at least 15 minutes. In a separate bowl, mix flour, paprika, and a pinch of salt.
10. Heat oil in a frying pan over medium-high heat. Take the onions out of the buttermilk, dredge them in the flour mixture, and fry until golden and crispy. Remove and drain on paper towels.
11. Preheat the broiler. Sprinkle the crispy onions over the mac and cheese.
12. Broil the Pulled Pork Mac and Cheese for about 3-5 minutes, or until the top is bubbly and golden. Serve warm and enjoy the layers of flavor and texture!
