This delicious Puttanesca-Style Pasta is a hearty, flavorful and healthy meal that comes together quickly! It’s a vegan and vegetarian-friendly dish that the whole family will enjoy. Perfect for weeknight dinners and beyond!

Ingredients:

– 1 pound penne pasta
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 4 cloves garlic, minced
– 2 tablespoons capers
– 1/2 teaspoon crushed red pepper flakes
– 1 (14-ounce) can diced tomatoes
– 1/4 cup kalamata olives, pitted and chopped
– 2 tablespoons chopped fresh parsley
– 2 tablespoons chopped fresh basil
– Salt and freshly ground black pepper, to taste

Directions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring frequently, until the onion is softened, about 5 minutes.

3. Add the capers, red pepper flakes, tomatoes, olives, parsley and basil and stir to combine. Simmer for 8-10 minutes or until the sauce has thickened.

4. Add the cooked pasta to the skillet and toss to combine. Cook for 2-3 minutes or until the pasta is heated through.

5. Season with salt and pepper to taste.

6. Serve the pasta warm with freshly grated Parmesan cheese, if desired.
