Quiche with a Deep Dish Crust

This delicious quiche with a deep dish crust is the perfect brunch dish for any occasion. It’s packed full of flavor with a golden and flaky crust, and a creamy egg and cheese filling. Serve with a side of fresh fruit or a light salad for a complete meal.

Ingredients:
• 2 tablespoons olive oil
• 1 onion, chopped
• 3 cloves garlic, minced
• 2 cups spinach, chopped
• 8 eggs
• 1/2 cup cream
• 1 1/2 cup shredded cheese
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 2 pre-made deep dish frozen pie crusts

Directions:
1. Preheat the oven to 375 degrees F.
2. Heat a large skillet over medium-high heat. Add the olive oil and onion and cook for 4-5 minutes until the onion is softened. Add the garlic and cook for an additional minute.
3. Add the spinach to the skillet and cook for 3-4 minutes until the spinach is wilted. Remove from the heat and set aside.
4. In a large bowl, whisk together the eggs, cream, cheese, salt, and pepper.
5. Place the first frozen pie crust in a 9-inch pie plate. Spread the spinach and onion mixture into the bottom of the crust. Pour the egg mixture on top.
6. Place the second crust on top of the quiche and press the edges together. Cut several slits in the top of the crust to let steam escape.
7. Bake the quiche for 40-45 minutes until the crust is golden and the center is set. Let cool for 15 minutes before serving.
