Quinoa-Stuffed Ratatouille Bell Peppers Recipe

Ingredients:

  • 4 bell peppers, washed and halved lengthwise
  • 1 cup quinoa, cooked
  • 1 cup ratatouille (canned or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions:
