Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup chopped parsley
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/4 cup diced red onion

Directions:
