These Lemon Lavender Honey Cupcakes combine the tangy zest of lemons, the calming aroma of lavender, and the sweet richness of honey, resulting in a unique, delightful, and irresistible dessert. They’re perfect for spring festivities, high teas, brunches or any special celebrations.

Ingredients:

For the Cupcakes:

  1. 2 cups of all-purpose flour
  2. 2 1/2 teaspoons of baking powder
  3. 1/2 teaspoon of salt
  4. 1 cup of granulated sugar
  5. 3/4 cup of unsalted butter, at room temperature
  6. Zest of 2 fresh lemons
  7. 3 large eggs
  8. 1 teaspoon of pure vanilla extract
  9. 1 cup of whole milk
  10. 1 1/2 tablespoon of dried culinary lavender, finely chopped

For the Lemon Honey Frosting:

  1. 1 cup of unsalted butter, at room temperature
  2. 4 cups of powdered sugar
  3. 5 tablespoons of honey
  4. 3 tablespoons of fresh lemon juice
  5. Zest of 1 lemon

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, combine the flour, baking powder, salt, and lemon zest. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Then beat in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir in the lavender until well combined.
  5. Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  7. While the cupcakes are cooling, prepare the frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until light and fluffy. Beat in the honey, lemon juice, and lemon zest until well combined.
  8. When the cupcakes have cooled, pipe or spread the frosting onto each cupcake.
  9. Garnish each cupcake with a sprinkle of lavender and a small slice of lemon before serving.

With their light and fluffy lemon base, creamy lemon honey frosting, and subtle hint of lavender, these cupcakes are a taste of spring that is sure to delight everyone who tries them. Enjoy!
