Lemon Lavender Honey Cupcakes Recipe

Ingredients:
For the Cupcakes:

- 2 1/2 teaspoons of baking powder

- Zest of 2 fresh lemons
- 3 large eggs
- 1 teaspoon of pure vanilla extract
- 1 cup of whole milk
- 1 1/2 tablespoon of dried culinary lavender, finely chopped
For the Lemon Honey Frosting:
- 1 cup of unsalted butter, at room temperature
- 4 cups of powdered sugar
- 5 tablespoons of honey
- 3 tablespoons of fresh lemon juice
- Zest of 1 lemon
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, combine the flour, baking powder, salt, and lemon zest. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Then beat in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir in the lavender until well combined.
- Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until light and fluffy. Beat in the honey, lemon juice, and lemon zest until well combined.
- When the cupcakes have cooled, pipe or spread the frosting onto each cupcake.
- Garnish each cupcake with a sprinkle of lavender and a small slice of lemon before serving.
