Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 teaspoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

Ingredients for Cream Cheese Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (180°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fill each cupcake liner with batter until about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow cupcakes to cool completely before frosting.

For the Cream Cheese Frosting:

  1. In a large bowl, beat the softened butter and cream cheese until creamy and smooth.
  2. Gradually add in the powdered sugar and vanilla extract, beating until the frosting is fluffy and well combined.
  3. Once the cupcakes are completely cooled, frost with the cream cheese frosting. Enjoy!
