Roasted Beet and Goat Cheese Arugula Salad
This Roasted Beet and Goat Cheese Arugula Salad is not only delicious, but also a healthy treat. Combining roasted beets, tangy goat cheese and flavorful arugula, this salad is sure to be a hit. The addition of a simple dressing adds a touch of flavor that ties all the ingredients together.
Ingredients:
- 2 large beets, peeled and cubed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup crumbled goat cheese
- 4 cups arugula
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
Directions:
- Preheat oven to 400°F. Place cubed beets on a baking sheet and toss with 2 tablespoons olive oil, salt and pepper.
- Bake for 30 minutes, stirring every 10 minutes, until beets are tender.
- Remove from oven and set aside to cool.
- In a large bowl, combine arugula and cooled beets.
- In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard and 2 tablespoons olive oil.
- Pour dressing over arugula and beets and gently toss to combine.
- Sprinkle crumbled goat cheese over salad and serve.
