Roasted Duck with Cherry Sauce
This delicious roasted duck with cherry sauce is a classic dish that is sure to please. The duck is roasted to perfection and the cherry sauce gives it a sweet and savory flavor that is sure to be a crowd pleaser.
Ingredients:
- 3-4 lb whole duck
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup dry red wine
- 2 cups fresh or frozen cherries, pitted
- 1/2 cup sugar
- 1/4 cup balsamic vinegar
- 1/4 cup water
- 1 tablespoon cornstarch
Directions:
- Preheat oven to 375 degrees F. Rinse the duck and pat dry with paper towels. Place the duck on a roasting pan and rub the skin with the olive oil. Sprinkle the skin with the salt, pepper, thyme, garlic powder, and onion powder.
- Roast the duck in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F when tested with a meat thermometer.
- While the duck is roasting, combine the cherries, sugar, balsamic vinegar, and water in a medium saucepan. Bring to a boil over medium-high heat and reduce the heat to low and simmer for 10 minutes.
- In a small bowl, mix together the cornstarch and red wine. Add to the cherry mixture and stir until the sauce has thickened, about 2-3 minutes.
- Remove the duck from the oven and allow to rest for 10 minutes before carving.
- To serve, carve the duck and place on a platter. Drizzle the cherry sauce over the duck and serve.
