Roasted Red Pepper Pasta Sauce

This roasted red pepper pasta sauce is a delicious vegan dinner recipe that is simple to make and packed full of flavor. It’s a great way to enjoy a healthy dinner packed with vegetables.

Ingredients:

  • 1 red pepper, roasted and diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vegetable broth
  • 1/2 cup canned diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste
  • 1/2 pound cooked pasta of your choice

Directions:

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Place the red pepper on the baking sheet and roast for 25 minutes, or until the skin is charred and the pepper is soft.
  3. When the pepper is cooled, remove the skin and seeds and dice the pepper into small pieces.
  4. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the oregano, red pepper flakes, and roasted red pepper and cook for another minute.
  6. Add the vegetable broth, diced tomatoes, and fresh basil and cook for 5 minutes.
  7. Reduce heat to low and stir in the nutritional yeast. Simmer for 10 minutes.
  8. Taste and adjust seasoning with salt and pepper. Serve over cooked pasta of your choice.
