Roasted Red Pepper Pasta Sauce
This roasted red pepper pasta sauce is a delicious vegan dinner recipe that is simple to make and packed full of flavor. It’s a great way to enjoy a healthy dinner packed with vegetables.
Ingredients:
- 1 red pepper, roasted and diced
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1/2 cup vegetable broth
- 1/2 cup canned diced tomatoes
- 1/4 cup chopped fresh basil
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- 1/2 pound cooked pasta of your choice
Directions:
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Place the red pepper on the baking sheet and roast for 25 minutes, or until the skin is charred and the pepper is soft.
- When the pepper is cooled, remove the skin and seeds and dice the pepper into small pieces.
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the oregano, red pepper flakes, and roasted red pepper and cook for another minute.
- Add the vegetable broth, diced tomatoes, and fresh basil and cook for 5 minutes.
- Reduce heat to low and stir in the nutritional yeast. Simmer for 10 minutes.
- Taste and adjust seasoning with salt and pepper. Serve over cooked pasta of your choice.
