Ingredients:
- 1 onion, diced
- 2 carrots, diced
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 cup tomato paste
- 1/2 cup vegetable broth
- 1 pound bow-tie pasta
- 1/4 cup freshly grated Parmesan cheese
Directions:
- Preheat oven to 425°F (218°C).
- In a large bowl, toss together onion, carrots, bell peppers, garlic, olive oil, oregano, basil, thyme, black pepper, red pepper flakes, and salt.
- Spread vegetables on a large baking sheet and roast for 20-25 minutes, until vegetables are tender and lightly browned.
- In a large saucepan, combine roasted vegetables, tomato paste, and vegetable broth. Simmer for 10 minutes.
- Meanwhile, cook the pasta in a large pot of boiling salted water according to package instructions.
- Once pasta is cooked, drain and add to saucepan with vegetables. Stir to combine.
- Serve with Parmesan cheese and enjoy!
