Ingredients:

  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • 1 cup baby spinach leaves
  • 1/2 cup crumbled goat cheese
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400F.
  2. On a large rimmed baking sheet, combine zucchini, bell peppers and red onion. Drizzle with olive oil and season with salt and pepper.
