Rosemary-Infused Balsamic and Honey-Glazed Pot Roast Recipe

Ingredients:
- 3-4 lbs of boneless beef chuck roast
- 1 tsp of kosher salt
- 1/2 tsp of freshly ground black pepper
- 1 tbsp of olive oil
- 2 cloves of garlic, minced
- 1 medium yellow onion, diced
- 1/4 cup of balsamic vinegar
- 1/4 cup of honey
- 2 sprigs of fresh rosemary
- 1 cup of beef broth
Directions:
- Preheat the oven to 350 degrees F. Season the beef roast with salt and pepper.
- Heat a large Dutch oven over medium-high heat. Add the olive oil and then the beef roast. Brown the roast on all sides. This should take about 8 minutes.
- Remove the roast from the pot and set aside. Add the garlic and onion to the pot and cook until the onions are soft and translucent, about 5 minutes.
- Add the balsamic vinegar and honey to the pot and stir to combine. Bring the mixture to a simmer and cook until it is reduced by half, about 5 minutes.
- Add the beef broth and rosemary to the pot and stir to combine. Return the beef roast to the pot and cover with the lid. Place the pot in the preheated oven and cook for 2 hours.
- Remove the pot from the oven and let it sit for 10 minutes before serving.
- Slice the beef roast and serve with the pan sauce.
