Saffron-Infused Beef Stroganoff with Sour Cream
This creamy and comforting dish is the perfect treat for a special weekend feast or a quick and easy weeknight meal. Saffron-infused beef stroganoff with sour cream is a delicious combination of beef, mushrooms, and sour cream, all cooked in a savory saffron-infused sauce. It’s sure to be a crowd pleaser!
Ingredients:
- 1 lb. beef stew meat, such as chuck or round
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon saffron threads
- 1 tablespoon tomato paste
- 1/2 cup beef broth or stock
- 1/2 cup sour cream
- Salt and freshly ground black pepper, to taste
- 2 tablespoons freshly chopped parsley, to garnish
Directions:
- Heat the olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook until browned, about 5 minutes.
- Add the onion and garlic and cook until softened, about 3-4 minutes.
- Add the mushrooms and cook until softened, about 3-4 minutes.
- Stir in the Worcestershire sauce, thyme, paprika, saffron, and tomato paste. Cook for 1 minute.
- Pour in the beef broth and bring to a simmer. Reduce heat to low and simmer for 10 minutes.
- Stir in the sour cream. Simmer until heated through, about 2 minutes.
- Season with salt and pepper, to taste. Garnish with parsley, if desired.
- Serve over egg noodles or mashed potatoes.
