Saffron-Infused Beef Stroganoff with Sour Cream

Saffron-infused beef stroganoff with sour cream is a delicious combination of beef, mushrooms, and sour cream, all cooked in a savory saffron-infused sauce. It’s sure to be a crowd pleaser!

Ingredients:

  • 1 lb. beef stew meat, such as chuck or round
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron threads
  • 1 tablespoon tomato paste
  • 1/2 cup beef broth or stock
  • 1/2 cup sour cream
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons freshly chopped parsley, to garnish

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook until browned, about 5 minutes.
  2. Add the onion and garlic and cook until softened, about 3-4 minutes.
  3. Add the mushrooms and cook until softened, about 3-4 minutes.
  4. Stir in the Worcestershire sauce, thyme, paprika, saffron, and tomato paste. Cook for 1 minute.
  5. Pour in the beef broth and bring to a simmer. Reduce heat to low and simmer for 10 minutes.
  6. Stir in the sour cream. Simmer until heated through, about 2 minutes.
  7. Season with salt and pepper, to taste. Garnish with parsley, if desired.
  8. Serve over egg noodles or mashed potatoes.
