Sage-Infused Sweet Potato Gnocchi with Butter Sauce

Ingredients:
- 2 large sweet potatoes, roasted and peeled
- 1 cup all-purpose flour
- 1 teaspoon fresh sage, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons butter
- 1 garlic clove, minced
- 2 tablespoons grated Parmesan cheese
Directions:
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Place the sweet potatoes on the baking sheet and roast for 45 minutes, or until they are soft and cooked through.
- Remove the sweet potatoes from the oven and let cool. Peel the skins off, then mash the sweet potatoes until smooth.
- In a large bowl, combine the mashed sweet potatoes, flour, sage, salt and pepper. Stir until a dough forms.
- Turn the dough out onto a floured surface and knead until it is smooth. Cut the dough into four pieces and roll each piece into a rope.
- Cut each rope into 1-inch pieces, then roll each piece into a ball. Place on a baking sheet lined with parchment paper.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook for 3-4 minutes, or until they are cooked through.
- In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute, stirring constantly. Add the Parmesan cheese and stir until melted. Pour the butter sauce over the cooked gnocchi and serve.
