Ingredients:

  • 2 large sweet potatoes, roasted and peeled
  • 1 cup all-purpose flour
  • 1 teaspoon fresh sage, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons butter
  • 1 garlic clove, minced
  • 2 tablespoons grated Parmesan cheese

Directions:

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Place the sweet potatoes on the baking sheet and roast for 45 minutes, or until they are soft and cooked through.
  3. Remove the sweet potatoes from the oven and let cool. Peel the skins off, then mash the sweet potatoes until smooth.
  4. In a large bowl, combine the mashed sweet potatoes, flour, sage, salt and pepper. Stir until a dough forms.
  5. Turn the dough out onto a floured surface and knead until it is smooth. Cut the dough into four pieces and roll each piece into a rope.
  6. Cut each rope into 1-inch pieces, then roll each piece into a ball. Place on a baking sheet lined with parchment paper.
  7. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 3-4 minutes, or until they are cooked through.
  8. In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute, stirring constantly. Add the Parmesan cheese and stir until melted. Pour the butter sauce over the cooked gnocchi and serve.
