Sausage and Pepper Pasta
This delicious Sausage and Pepper Pasta is the perfect easy weeknight meal. It’s full of Italian flavors and comes together in one pot, making it a great option for busy families. The combination of sweet peppers, spiced sausage, and creamy pasta makes for a comforting meal that everyone will love.
Ingredients:
- 1 pound Italian sausage
- 1 onion, chopped
- 3 bell peppers, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 2 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) package penne pasta
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions:
- In a large pot or Dutch oven, cook the sausage until browned. Remove the sausage and set aside.
- In the same pot, add the onion, bell peppers, garlic, Italian seasoning, and red pepper flakes. Cook until the vegetables are softened, about 5 minutes.
- Add the chicken broth, tomatoes, and pasta. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
- Return the cooked sausage to the pot and stir to combine.
- Add the Parmesan cheese and stir to combine.
- Season with salt and pepper, to taste.
- Serve warm with extra Parmesan cheese, if desired.
