Seafood Bolognese Spaghetti with Shrimp and Scallops

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1 (15 ounce) can diced tomatoes
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 pound spaghetti
  • 1/4 cup freshly grated Parmesan cheese

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onions, celery, and garlic and cook until softened, about 5 minutes.
  2. Add the shrimp and scallops and cook until just barely cooked through, about 3 minutes.
  3. Stir in the red pepper flakes, wine, tomatoes, parsley, oregano, thyme, bay leaf, salt, and pepper.
  4. Reduce the heat to low and simmer for 15 minutes.
  5. Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions.
  6. Drain the spaghetti and return to the pot. Add the Bolognese sauce and toss to combine.
  7. Divide the spaghetti among 4 plates. Top with Parmesan cheese and serve.
