Seared Tuna Niçoise Salad

Ingredients:
- 2 tuna steaks
- 2 tablespoons olive oil

- 3 cups green beans, trimmed and cut into 1-inch pieces
- 2 cups diced new potatoes
- 1/2 cup kalamata olives, pitted and sliced
- 4 large eggs, hard boiled and cut into wedges
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped fresh parsley
Directions:
- Season the tuna steaks with the olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, garlic powder, and oregano. Heat a large skillet over medium-high heat and add the tuna steaks. Cook for 3-4 minutes per side, or until cooked through. Remove from heat and set aside.
- Bring a pot of salted water to a boil over high heat. Add the green beans and potatoes and cook for 5 minutes, or until the potatoes are tender. Drain and rinse with cold water to stop the cooking. Set aside.
- In a large bowl, combine the cooked potatoes, green beans, olives, eggs, and tuna.
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pour the dressing over the salad and toss to combine.
- Divide the salad among plates and top with parsley. Serve immediately.
