Ingredients:

  • 2 tuna steaks
  • 2 tablespoons olive oil

  • 3 cups green beans, trimmed and cut into 1-inch pieces
  • 2 cups diced new potatoes
  • 1/2 cup kalamata olives, pitted and sliced
  • 4 large eggs, hard boiled and cut into wedges
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley

Directions:

  1. Season the tuna steaks with the olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, garlic powder, and oregano. Heat a large skillet over medium-high heat and add the tuna steaks. Cook for 3-4 minutes per side, or until cooked through. Remove from heat and set aside.
  2. Bring a pot of salted water to a boil over high heat. Add the green beans and potatoes and cook for 5 minutes, or until the potatoes are tender. Drain and rinse with cold water to stop the cooking. Set aside.
  3. In a large bowl, combine the cooked potatoes, green beans, olives, eggs, and tuna.
  4. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pour the dressing over the salad and toss to combine.
  5. Divide the salad among plates and top with parsley. Serve immediately.
