Ingredients:

  • 1 cup cooked quinoa
  • 2 tablespoons ground flaxseed
  • 3 tablespoons chia seeds
  • 1/2 cup old-fashioned oats
  • 1/2 cup almond meal
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the cooked quinoa, ground flaxseed, chia seeds, oats, almond meal, baking powder, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, egg, maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Using a 2-tablespoon scoop, scoop the dough onto the prepared baking sheet, leaving 1-inch between each biscuit, and flatten slightly.
  6. Bake for 12 to 14 minutes, until golden brown.
  7. Let the biscuits cool on the baking sheet for 5 minutes, and then transfer to a wire rack to cool completely.
