Shrimp and Grits Omelette

This delicious omelette is the perfect combination of creamy grits and savory shrimp. It’s a quick and easy dish perfect for a busy morning.

Ingredients:

  • 1 cup cooked grits
  • 1 cup cooked, peeled, and deveined shrimp
  • 1 tablespoon butter
  • 3 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Directions:

  1. Heat the butter in a non-stick skillet over medium heat. Add the shrimp and cook for 3-4 minutes, stirring occasionally. Remove the shrimp from the pan.
  2. In a bowl, whisk together the eggs, cheese, garlic powder, salt, and pepper. Set aside.
  3. Add the olive oil to the skillet and heat over medium heat. Pour in the egg mixture and cook for 2-3 minutes, stirring occasionally, until the eggs are almost fully cooked.
  4. Add the cooked grits and shrimp to the skillet and stir to combine. Cook for an additional 2-3 minutes until the eggs are fully cooked.
