Shrimp Niçoise Salad Recipe

This Shrimp Niçoise Salad is an easy and delicious way to get your seafood fix. A mediterranean-style recipe, it’s loaded with fresh vegetables, shrimp, olives and a light vinaigrette dressing. Perfect for a light lunch or summer dinner, this healthy salad is sure to become a favorite.

Ingredients:

  • 1 lb. cooked and peeled shrimp
  • 1/2 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/2 cup kalamata olives
  • 1/2 cup red onion, diced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and Pepper to taste

Directions:

  1. In a large bowl, combine the lettuce, tomatoes, cucumber, olives, and red onion. Toss to combine.
  2. In a separate bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, garlic, salt, and pepper.
  3. Add the shrimp to the salad and pour the vinaigrette over the salad. Toss to combine.
  4. Cover and chill the salad for at least 30 minutes before serving.
  5. Serve the salad with extra vinaigrette on the side.
