These Grilled Teriyaki Chicken Skewers are a perfect meal for summer grilling season. The succulent chicken is marinated in a zesty teriyaki marinade, then threaded onto skewers and grilled to perfection. Serve with grilled vegetables and your favorite side dish for a delicious meal.

Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • Skewers for grilling

Directions:

  1. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, garlic, sesame oil, ginger, red pepper flakes, and black pepper.
  2. Place the cubed chicken in a large resealable bag or bowl, and pour the marinade over it. Stir to combine, then seal the bag or cover the bowl and refrigerate for at least 2 hours, or up to overnight.
  3. When ready to grill, preheat a gas or charcoal grill to medium-high heat.
  4. Thread the chicken cubes onto the skewers, leaving a bit of space between each cube. Discard the marinade.
  5. Lightly oil the grill grates, then place the skewers on the grill. Grill for 5-7 minutes per side, or until the chicken is cooked through.
  6. Remove the skewers from the grill and let rest for a few minutes before serving.
  7. Serve with grilled vegetables and your favorite side dish.
  8. Enjoy!
