Ingredients:
- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, peeled and chopped
- 3 potatoes, peeled and chopped
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons flour
- 2 tablespoons water
Instructions:
- In a slow cooker, combine the beef, onion, garlic, carrots, potatoes, beef broth, diced tomatoes, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or on high for 4 hours.
- In a small bowl, whisk together the flour and water until smooth. Stir into the stew and cook for an additional 30 minutes or until the stew thickens.
