Slow Cooker Chicken à la King Recipe

Ingredients:
- 2 pounds boneless, skinless chicken breasts
- 1 medium onion, diced
- 1/2 cup celery, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 3 tablespoons sherry
- 1 cup frozen peas
- 1/2 cup sliced mushrooms
- 4 cups cooked egg noodles or rice, for serving
Directions:
- Place chicken in the bottom of a slow cooker.
- Add onion, celery, garlic, chicken broth, cream, thyme, parsley, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- When chicken is cooked, remove it from the slow cooker and shred it with two forks.
- In a medium saucepan, melt butter over medium heat. Add flour and whisk for 2 minutes, until the mixture is golden brown.
- Add the sauce from the slow cooker to the saucepan and whisk until thickened, about 5 minutes.
- Add the shredded chicken, sherry, peas, and mushrooms. Simmer for 5 minutes.
- Serve over cooked egg noodles or rice.
