Slow Cooker Chicken à la King Recipe

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 3 tablespoons sherry
  • 1 cup frozen peas
  • 1/2 cup sliced mushrooms
  • 4 cups cooked egg noodles or rice, for serving

Directions:

  1. Place chicken in the bottom of a slow cooker.
  2. Add onion, celery, garlic, chicken broth, cream, thyme, parsley, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. When chicken is cooked, remove it from the slow cooker and shred it with two forks.
  6. In a medium saucepan, melt butter over medium heat. Add flour and whisk for 2 minutes, until the mixture is golden brown.
  7. Add the sauce from the slow cooker to the saucepan and whisk until thickened, about 5 minutes.
  8. Add the shredded chicken, sherry, peas, and mushrooms. Simmer for 5 minutes.
  9. Serve over cooked egg noodles or rice.
