This Slow Cooker Chicken Chili is a healthy and flavorful meal that’s easy to make. Made with chicken, beans, corn, and a variety of spices, it’s a perfect meal for a chilly day.

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cans diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. In a slow cooker, combine the chicken, onion, garlic, diced tomatoes, black beans, kidney beans, corn, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  2. Cover and cook on low for 8 hours or on high for 4 hours.
  3. Shred the chicken with two forks and serve.
