Ingredients:

  • 1 (3-4 pound) beef chuck roast
  • 2 onions, sliced
  • 4 carrots, peeled and cut into chunks
  • 4 celery stalks, cut into chunks
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions:

  • Season the chuck roast with salt and pepper. Place the sliced onions, carrots, celery, and minced garlic in the bottom of a slow cooker.
  • In a separate bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste. Pour the mixture over the vegetables in the slow cooker.
  • Place the seasoned chuck roast on top of the vegetables and pour any remaining sauce over the meat.
  • Add the fresh rosemary sprigs to the slow cooker. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and easily shreds.
  • Remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and sauce.
