Ingredients:
- 3-4 pound beef chuck roast
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh oregano, chopped
- 1 cup beef broth
- 3 carrots, peeled and cut into 2-inch pieces
- 3 potatoes, peeled and cut into 2-inch pieces
- 2 turnips, peeled and cut into 2-inch pieces
Directions:
- Season the beef chuck roast with salt and pepper.
- In a slow cooker, combine the beef, onion, garlic, rosemary, thyme and oregano.
- Pour the beef broth over the beef and vegetables.
- Cover and cook on low for 8 hours.
- Add the carrots, potatoes and turnips to the slow cooker and stir to combine.
