Ingredients:

  • 3-4 pound beef chuck roast
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 cup beef broth
  • 3 carrots, peeled and cut into 2-inch pieces
  • 3 potatoes, peeled and cut into 2-inch pieces
  • 2 turnips, peeled and cut into 2-inch pieces

Directions:

  1. Season the beef chuck roast with salt and pepper.
  2. In a slow cooker, combine the beef, onion, garlic, rosemary, thyme and oregano.
